Belgian waffles and herby fried chicken with chipotle maple syrup
For this special waffle topping, we borrowed from the Pennsylvania Dutch way of serving waffles with stewed chicken. Everyone will love the sweet, spicy and crispy combination of the herbed fried chicken and Chipotle flavored maple syrup with the waffles.

Instructions
  1. Marinate chicken in the marinade ingredients and refrigerate in a plastic bag for an hour at least or overnight at best.
  2. When the chicken is ready to fry, drain, dip first in the beaten eggs and then in the seasoned flour.
  3. Shallow fry with canola oil covering a third of a shallow pan (you can also use peanut oil, or any oil with a high smoking point).
  4. When the chicken is well-browned (in about 7 minutes to 10 minutes) cook in the oven for an additional 15 minutes to 20 minutes and get your waffles ready.
  5. For the waffles, mix the wet ingredients in a bowl.
  6. In another bowl, mix the dry ingredients and stir into the wet mixture until it is just combined (but not overmixed).
  7. Heat the waffle iron and pour the batter until it just covers the grid.
  8. Cook until golden brown.
  9. Blend the maple syrup with butter and Chipotle peppers in a blender.
  10. Serve the fried chicken with the hot waffles and spicy maple syrup on the side.
